Sweet potato is very rich in beta carotene one of the most powerful antioxidants to protect brain cells from degeneration.

It’s also one of the richest sources of vitamin A for eye health. Plus, it makes a post workout food as it helps to reduce inflammation in the body.

Ingredients

  • 2 large sweet potatoes, chunked
  • 300g spinach
  • 2 tbsp rapeseed oil
  • Sea salt, to taste

Method

  1. Place the potato chunks in large oven proof dish and add the oil. Sir the the potatoes around until well covered with the oil, and season with salt.
  2. Bake in a preheated oven (200c) for around 15 minutes
  3. Meanwhile lightly steam the spinach
  4. When all is ready, place on plate or allow to cool and serve with lunch at work the next day with large salad
