Ingredients

  • 1 salmon fillet (supermarket pre-cooked)
  • 3” cucumber, sliced
  • Handful spinach, chopped
  • ½ tsp coconut oil
  • Handful pine nuts
  • Red onion or cherry tomatoes
  • Fresh lime juice

Method

  1. Place all the ingredients on a plate and squeeze the lime juice over the top.
