Seaweed, Feta & Walnut Salad

This scrumptious high-protein salad is ideal for boosting your immune system, and for beautifying.

Healthy eating is all about balance, and this salad is the ideal example of that. Seaweed is naturally high in nutrients and low in calories, making it a favourite for detoxing. It helps slow down digestion and, being low GI, helps you feel fuller for longer. It also packs in more vitamin C than oranges, and offers anti-inflammatory properties.

In contrast, feta is high in calories, and causes inflammation. However, a small amount of inflammation is essential for a healthy digestive system as it helps you to fight disease, so the pairing is perfect. As it's made from sheep or goat's milk, feta offers more calcium than cow's milk.

Walnuts are a great source of omega 3, and are fantastic 'hair and skin food'.

  • 2 cups rehydrated seaweed
  • ½ cup feta
  • ¼ cup toasted walnuts
  • ¼ cup toasted pine nuts
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon
  • Pinch of salt
  1. Toss seaweed, feta, olive oil, lemon and salt
  2. Sprinkle toasted walnuts and pine nuts and enjoy
