Quinoa & Roasted Pumpkin Bowl

This bowl of goodness is bursting with fibre and protein, making it the ideal autumn salad.

Naturally gluten-free quinoa is one of only a few plant foods that are considered to be a complete protein, as it contains all nine essential amino acids. It is also rich in iron, and contains B-vitamins, magnesium, phosphorus, potassium, calcium, vitamin E, and fibre.

Pumpkin is the perfect partner. Not only is it a low-calorie option (there's just 50 calories in a cup of mashed pumpkin) and full of fibre, it offers numerous health benefits, including boosting vision, lower blood pressure, helping you to sleep better and is also good for heart health.

MeTHOD

  • 2 cups cooked quinoa
  • 1 tbsp extra virgin olive oil
  • 1 cup roasted pumpkin, cubed
  • ½ cup kale, chopped
  • ¼ pistachios
  • ¼ pomegranate seeds
  • ¼ almond
  • 1 tbsp lemon
  • Pinch of salt
  1. Place quinoa in a serving bowl
  2. Toss pumpkin, kale, pistachios and pomegranate seeds with olive oil, salt and lemon
  3. Add to quinoa bowl
  4. Sprinkle with almonds and enjoy
