Mango is rich in potassium and copper, which makes it a superb sports nutrition food.

The potassium helps replenish electrolytes lost through sweat and copper supports healthy nerves and joints.

Ingredients

  • 100g Mexican chicken (supermarket pre-cooked)
  • Handful rocket
  • Mixed beans
  • ¼ mango, chunked
  • 2 tbsps crème fraîche (Dressing)
  • 1 garlic clove, crushed (Dressing)
  • ½ tsp English mustard (Dressing)
  • Fresh lime juice (Dressing)

Method

  1. Place the rocket on the plate then add the beans, chicken and mango
  2. Mix all the dressing ingredients together and then pour over the salad
