Cous Cous and Kale salad to pack in those plant-based nutrients

Cous cous is a whole grain food rich in fibre for healthy bowels. It's rich in B vitamins including thiamin, folate and pantothenic acid for healthy and strong hair, skin and nails.

Kale is a member of the cabbage family, and is absolutely loaded with goodness. In fact, it's among the most nutrient-dense foods on earth, containing vitamins A, B6, C and K. It also packs a mineral punch, with good levels of manganese, copper, calcium, potassium and magnesium.

As a 'leafy green' it is low in fat, and what little fat it does contain is in essential omega-3 fatty acids. As it's quite bulky it's filling, making it a fantastic weight-loss food and is beneficial for just about every part of your body, from improving eye health to strong bones.

Pumpkin seeds are often just discarded when we carve those pumpkins for Halloween, but are in fact a fantastic source of fibre. Rich in magnesium for a healthy heart and liver, and zinc for immune support, pumpkin seeds have also been linked with improving insulin regulation within the body, decreasing the symptoms of menopause and improving sleep.

Walnuts are a fatty food, but again, most of the fats come in the form of omega-3 and omega 6 fatty acids, and won't inhibit your weight loss if eaten with low calorie foods, such as Kale. They're also full of antioxidants and vitamins including vitamin E which strengthens your immune system.

Manuka honey is famed for it's medicial properties, and apple cider vinegar is incredibly low in calories (just 3 per tablespoon!) yet lowers blood sugar, in antibacterial, and helps you feel full.

Coconut oil is great for bone and teeth health, among it's many properties, and lemon juice gives you a hit of vitamin C.

Filling and crammed with nutrients, this is a fantastic salad to help you avoid that mid afternoon slump.

 

 

Ingredients

  • 20g cous cous, cooked
  • Handful shredded kale, lightly steamed
  • 2 tbsps pumpkin seeds
  • Handful chopped walnuts
  • 1 tsp Manuka honey (Dressing)
  • 2 tbsps apple cider vinegar (Dressing)
  • 1/2 fresh lemon, juiced (Dressing)
  • 2 tbsps extra virgin olive oil (Dressing)
  • 2 tbsps coconut oil, heated just until liquid (Dressing)

Method

  1. Combine the cous cous, kale, pumpkin seeds, and walnuts in a bowl
  2. Place the honey, vinegar, lemon juice and zest, in a medium bowl and whisk
  3. Slowly pour in the olive oil, then the coconut oil, until well-blended
  4. Place the salad on a plate, pour the dressing over and serve
