Courgetti with Cashew Pesto

This is a super healthy alternative to spaghetti.

Courgettes are one of the lowest calorie vegetables (just 17 in a 100g serving) and an excellent source of dietary fibre. They make you feel fuller for longer, without adding calories, making them a fantastic choice for losing weight. They are also full of manganese and vitamin C and have a high content of omega-3 fatty acids and a whole host of other nutrients.

Cashew nuts are very low in fibre, however they are packed with antioxidants and good for lowering blood pressure, plus they add a tasty crunch to the spaghetti.

Creating a garlic and basil pesto not only adds to the spaghetti illusion, it's also great for your immune system and your blood.

  • 2 courgettes
  • ¼ cup cashews
  • ¼ cup pine nuts
  • 6-8 mixed tomatoes, thinly sliced
  • Fresh lemon juice
  • 2 cups of basil leaves
  • 1 clove garlic
  • Pinch of salt
  1. Place the courgettes in a spiralizer to create the spaghetti
  2. Mix the courgettes with a generous squeeze of lemon juice and pinch of Himalayan salt and place in a bowl to one side
  3. To make the cashew pesto combine all of the remaining ingredients into a small food processor, gradually adding in the olive oil
  4. Serve the courgetti with a generous spoonful of the pesto and tomato slices
